FRUIT AND NUT ENERGY BITES
Every time I make these for any gathering it has been a big hit! Although this is in the snack category you could easily have this for dessert! I do:) They have no added sugar and yet sweet and healthy.
INGREDIENTS:
DATES:1 CUP
ALMONDS:1 CUP
DESICCATED COCONUT:1/4 CUP
CHIA SEEDS: 2 TBSP
CACAO POWDER:1 TBSP
Add all in the ingredients in a food processor or blender.Pulse till they mix well I usually leave them a little coarse and not smooth, but its up to you how you like it.
Make little balls with a small cookie scoop or just with your hands.The dates act as a good binder and keeps it all together.
VARIATION:
You can add walnuts,cashews or any nut to suit your taste.
For a more protein packed snack, add a tsp of protein powder.
Add a teaspoon of flax seeds for a more nutritious snack.
